Sandra’s Recipes: 3 Guilt-free Desserts Your Children Would Love!

Some would say that dessert is the best meal of the day, but when it is healthy, guilt-free AND delicious? We could eat it all day long! Here’s 3 guilt-free desserts your whole family would love!

Raspberry Cauliflower Ice Cream Cake
Makes a 6” cake

Base

11/2 cups pumpkin seeds
3 dates, pitted
2 tablespoons coconut oil
11/2 tablespoons agave/ maple syrup or sweetener of choice

Filling

3 cups boiled or steamed cauliflower florets
11/2 cups fresh raspberries
9 tablespoons coconut oil
8 tablespoons sweetener of choice (date paste, maple syrup)
3 tablespoons lemon juice
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup pumpkin seeds

ASSEMBLY

Process the pumpkin seeds, coconut oil, sweetener and dates in a food
processor into a sticky crumble. Transfer the mixture into a well greased 6’
springform pan. Press firmly into pan, smoothing off the edges. Place pan in
the freezer.

Ensure all ingredients are at room temperature before starting. Blend all filling
ingredients, except pumpkin seeds into a smooth mixture. Pulse in/ stir in
pumpkin seeds. Pour mixture into pan over the crust. Place back into freezer
for 10 mins, then decorate with any toppings.
Freeze the cake for 8 hours or overnight. Remove from freezer 5 mins before
serving to let it warm up slightly. Freeze any leftovers straight away.

* suggested toppings: sunflower seeds, any berries, cranberries, nuts

 

Milk Chocolate Custard

1 avocado
½ cup seed/nut milk/ coconut milk
¼ cup agave/ maple syrup/date paste
¼ cup cacao powder
1 teaspoon vanilla extract
pinch cinnamon
pinch salt

Add cacoa powder last, blend until smooth. Serve in chilled glasses or bowls
before serving.

Serving suggesions: strawberries, blueberries, bananas, nuts, seeds

* adjust sweetner based on sweetness of nut/seed milk

 

Strawberry-Acai Chocolate Truffles
raw, gluten -, refined sugar-,dairy- ,soy-free, vegan
Makes 20 truffles

60ml light tahini
60ml maple syrup
1 tbs acai powder
1tbs strawberry powder
45g chia seeds, ground
4 tbs ground almonds
2 tbs cocoa/ cacao powder plus extra for dusting
pinch of sea salt

ASSEMBLY

Place all ingredients into a bowl and mix well until glossy.
Take ½ tbs of the mixture and roll it between palms of your hands to form a
soft truffle. Drop each one into cocoa powder to coat. Refrigerate them for at
least 1 hour.
